Lemon, Garlic, and Herb Salad Dressing

This is a simple dressing that you can use on salads or even as a marinade.  It is fresh and full of nutrients making it a guilt free dressing.  The fresh lemon zest offers a wide variety of nutrients.  Adding garlic and herbs only increases its nutritional value.  Making this dressing gives you a natural and unprocessed way to add flavor to any meal.  It will not only boost your immunity, but also aid in digestion and increase your heart health!

INGREDIENTS:

  • Juice from 3-4 lemons

  • Zest from 1 lemon

  • ½ Cup organic cold pressed olive oil

  • 1 Tablespoon honey

  • 2 sprigs fresh rosemary

  • 1 Teaspoon fresh thyme

  • 1 garlic clove minced

  • Pinch of sea salt


Mix garlic, rosemary and thyme together using a pestle.  Add this mixture and all other ingredients to a bowl and mix well.  If you do not have a pestle you can add all the ingredients to a blender or food processor.  Store in an airtight container in the fridge.  Let sit for a couple hours if you have the time to allow the flavors to really come together.  This will last up to a week in the fridge.

NOTES:

If you like a thicker dressing you can add a tablespoon of Tahini.

If you like a little spice, add some crushed red pepper flakes.
