Lupinis are full of protein and contain very little starch and sugar. They also offer prebiotic soluble fiber to make your gut happy. Ingredients:
3 Cups Lupini Beans, drained and rinsed
2 cups spinach, chopped
2 cups arugula, chopped
1 bunch fresh parsley,chopped
1 Avocado, peeled and chopped
1 cup cherry tomatoes, halved
½ cup red onion, finely chopped
4 Tbs pepitas
2 Tbs olive oil
2 Tbs lemon juice
1 Tbs balsamic vinegar
1 tsp himalayan salt
2 cloves garlic, minced
Garnish options: red pepper flakes, hemp seeds, lemon zest, grilled chicken
Simply add all ingredients to a bowl and mix well.
