Snack Size Protein Bites

We are a busy family, always searching for easy make ahead snacks that we can grab on the go! I like to experiment with different variations of protein snacks, this one is my little two’s favorite. They are sweeter than others, but all that flavor comes from healthy ingredients instead of simple sugar.
Ingredients:
1⁄2 cup goji berries
3⁄4 cup mulberries
2⁄3 cup pitted dates
1⁄4 cup hemp hearts
1 tablespoon chia seed
1⁄3 cup flaxseed
1⁄3 cup mixed nut butter
1⁄3 cup vanilla protein powder
1⁄4 cup cacao nibs
Start by placing the mulberries and goji berries in a food processor. Process the berries until they are broken down and coarse. Place the rest of the ingredients in a bowl and mix well. Then add the broken down berries and continue mixing. The mixture should start to feel sticky. Once all of the ingredients are incorporated, roll them into bite size servings. If they are not holding well because they are too wet, just add some oats until they reach a consistency you enjoy. If they are too dry, add some more nut butter. Place them in an airtight container, store them in the refrigerator (for up to 2 weeks) and enjoy having a healthy snack to grab on the go! You can also make a larger batch and freeze them for up to a month.
Notes:
Any nut butter will do, I enjoy a mixed nut butter. If you need a nut free version, sunflower seed butter will work great. If you want to omit the protein powder you can just use oats instead. I use vega protein for my protein snacks, they offer different flavors and I love that it is vegan and organic.
