Vegetable Sheet Pan Dinner

As a busy mom of 8, I am always looking for easy meals that I can prep ahead of time and then have the least amount of dishes!

You can use any veggies with this recipe, sometimes I make it with whatever is left in the fridge! Use this as a way to mix different flavors and try new things, it's a great way to sneak in choices the family doesn’t necessarily love, but you know they need! Get creative and make your family a rainbow of nutrition.

Ingredients:

1 Cup cubed sweet potatoes

1 Small onion sliced

2 Red peppers sliced

1 Cup mushrooms

1 Cup baby carrots

1 Cup spinach chopped

1 Cup cherry tomatoes halved

Dressing ingredients:

¼ Cup honey

½ Cup olive oil, plus 2 Tbsp

2 Tbsp Dijon mustard

2 Tbsp balsamic vinegar

3 Garlic cloves minced

Himalayan salt to your liking

Preheat the oven to 350 degrees. Spray your baking sheet with cooking spray and prep all your veggies. Keep the spinach and tomatoes to the side, place the rest of your veggies on your baking sheet. Mix together the dressing ingredients, except 2 Tbs of your olive oil and whisk well. Pour the dressing over your veggies and place in the oven, cook for 30 Min.  After 30 Min remove your veggies from the oven, add the spinach and tomatoes and then drizzle with the remaining 2 Tbsp of the olive oil. Place back in the oven and cook for another 15 Min. Remove and stir well.

This is a nutritious and delicious way to explore a variety of veggies.  If you want to add meat, you can simply slice up some turkey or chicken sausage and place on top and bake with your vegetables. My family enjoys eating this over basmati rice.
